Scramble Eggs
4 Whole beaten eggs
4 Mushrooms chopped
1/4 cup Yellow sweet onion
1/2 medium Tomato chopped
1/4 cup Yellow & Orange sweet peppers
Butter or cooking oil
In a medium skillet cook in medium heat the mushrooms in the butter for 3 seconds then add the onions and sweet peppers while stirring up the ingredients. Once the onions become translucent add the tomatoes and stir frequently. Once the tomatoes release its juices add the beaten eggs.
With a spatula move to the middle of the pan the edges of the eggs that have turned solid yellow and continue doing this movement where you see the edges of the egg turning solid. While using this motion the eggs will break apart on its own until becomes scrambled. Do not be tempted to rise the heat because it will dry out the eggs. Continue using this motion until you see the eggs being solid while keeping the juices running. Voila, the scrambled eggs are ready to eat!
Tip: Use a piece of French bread to make a sandwich with it or make toasts to eat it along with the eggs.

Banana Cremita
(Banana Cream of Wheat)
(1 serving)
2 cups 1% Milk
1/2 cup Cream of Wheat
1 whole Banana in pieces
1/4 cup Sugar
1 Tbsp Vanilla Extract
1/2 Tsp Ground Cinnamon
Directions:
1. Combine all ingredients on a cool pot and stir it all up until sugar is dissolved
2. Turn on the heat on Medium-High and stir it up often to avoid milk get burned.
Note: It must boil a little bit but can't boil too much otherwise the cream will turn as a big mass.
3. Keep stirring it up until you get the desire consistency. Once bubbles start popping up the cream is ready to serve.
4. Once the cream is served on the plate top it with a dash of ground cinnamon.
