Mofongo

One of the most authentic Puertorrican dish. It can be eaten with any type of seafood as well any type of meat. You name it and we make it for you.
Ingredients:
I Green Plantain
1/2 c of Pork chicharron
Olive Oil
Coarse Salt
Directions:
1. Peel off the skin of the plantain by cutting it without perforating the inside with the knife. Note: it's advisable to use a paired knife for better results.
2. Once the skin is off, cut the plantain in pieces, such as 5 to 6 pieces. Ensure each piece is the same size for better results while cooking.
3. Boil the pieces of plantains in salty water by using coarse salt for 30 minutes or until a fork can slide a piece without forcing it.
4. Drain the salty water and mashed the pieces of plantain with a masher. Add olive oil little by little until the plantains become soft and can come together in your hands. Do not over-do it.
5. Add the pork chicharron and mash them along with the plantain until they are well combined. Note: If you get hard pieces of chicharron from the package try to break them apart only. These will come together at the moment of creating the balls.
6. Using both of your hands take a reasonable amount that fit in the palm of both of your hands to give the form of a ball.

Note: To make the balls the plantain must be hot enough. The hotter your hands can resist the better. Try to avoid for the plantain to get cold, otherwise it will be hard to make the balls.
